Chef T

Chef T Lawrence-Simon is a chocolatier and pastry chef based in Somerville, Massachusetts. Starting as a home baker, T found a love for pastry, specifically studying the French Patisserie methods. After being scouted and cast on Food Network Canada's Great Chocolate Showdown, T competed his way to the finals, proving himself as a talented and creative dessert maker. T was later cast on FOX/HULU’s Crime Scene Kitchen, where he once again made it to the finals, solidifying his reputation for high-level pastry skills.

Since these experiences, T has pursued even more challenging techniques and repertoire. In addition to graduating from and becoming a Certified Chocolatier through Ecole Chocolat’s Professional Chocolatier Program, T spent three months training in Las Vegas under world-renowned Chef Amaury Guichon—known for his viral edible creations on TikTok and Instagram—along with Chef Michel Ernots. T also trained at Robuchon in the MGM Grand under Chef Gilbert Pena, mastering advanced pastry techniques.

Through Cirque du Soufflé, T merges his love for the creative and daring aspects of circus performance with the precision and innovation of desserts. His 5-course dessert tasting menus have quickly gained attention, offering a unique experience that showcases his passion for pushing boundaries and delighting the senses with every course. During the winter months, T also creates and sells chocolate confections, which have developed a huge fan base and are shipped internationally to satisfy sweet tooths around the world.
